birthday cake bites (gf).



Y’all. We can now eat cake for breakfast. Well, we can eat these vegan + gluten free cake bites recently shared by Minimalist Baker. I love making a batch of energy balls on the weekend so I can snack all week long at work in the afternoon.



  • 1 1/4 cup pitted dates
  • 1 1/4 cup raw walnuts
  • 1 cup almond flour
  • 1/3 cup coconut flour
  • 2 tsp vanilla extract
  • Sprinkle of sea salt
  • optional: add in a tsp of adaptogens! I love ashwaganda, reishi and morinaga.



Throw all ingredients into a food processor and pulse until everything is blended well enough to roll into balls. I rolled in some fun sprinkles, but you could also try some shredded coconut on top or mixed in with the dough!




Store in the fridge and enjoy!
