Sweet Tater Bread (GF).


Look at that LOAF!


In my never-ending quest to make the healthiest + easiest snacks in town, below is a recipe for an amazing loaf of sweet potato snacking bread from shutthekaleup. She is a GREAT follow–always has awesome new recipes, tips and ideas. Below is my slightly tweaked version.


  • 1 roasted sweet potato (use fork/knife to create a few openings, then bake at 400 degrees for about 40 min)
  • 2 smallish ripe bananas
  • 3 eggs
  • 1/3 cup almond butter
  • 1 tsp vanilla extract
  • 2 tbs maple syrup
  • 1/2 cup coconut flour
  • 1 tsp baking powder
  • Pinch of cinnamon, cardamom, sea salt
  • Handful of chocolate chips


Heat oven to 350 degrees. Mash the sweet potato and nanners in a bowl. Mix in eggs, almond butter, vanilla extract and maple syrup. Then add coconut flour, baking powder and spices.

 Spray a loaf pan + sprinkle your choco chips over the top like I did for optimal gooeyness. Bake for 40 – 45 minutes.

 To help with springtime allergies, drizzle a lil raw local honey (must have honeycomb in it + be unfiltered to actually work) on top before serving.
