I’m obsessed with waffles, pancakes, cinnamon rolls, or anything sweet and sticky for breakfast. Eating too much gluten gives me brain fog and tummy aches, so here is the EASIEST, PEASIEST gluten free sweet potato recipe you’ve ever seen.
Cook two medium sweet potatoes (I used Japanese sweet taters) in the oven at 400 degrees until they are mashable with a fork. Heat up your waffle iron, spray with coconut oil and JUST SPOON ON A HEFTY SCOOP of mashed sweet potato and close iron until crispy.
